The Philippines is known for its Philippine Lechon. Almost all occasions aren't complete without it, whether it is a wedding, birthday, anniversary, baptism or fiestas. The Philippine Lechon has different variations depending on what region it comes from. Cebu, which is found the Visayas region is famous for its Philippine Lechon called Lechon de leche which is a roasted young swine with almost no fats. It's so juicy and suckling that people crave for it such that Filipinos who stayed many years abroad looked for it the minute they set foot on the Philippines once again. This Philippine Lechon is also exported to other countries. Another variation for the Philippine Lechon is to be deep fried to make it more suckling. Aside from these two, another famous Philippine Lechon is from Baliwag, which is a part of Bulacan in Central Luzon. Another variation of the Philippine Lechon would be the Lechon Baka which is actually a roasted calf. At present, Filipino creativity has produced a Philippine Lechon manok, which is a roasted chicken.
